Como Como, the new, on-site marisqueria, serves up traditional Mexican cuisine from 10+ regions (including Acapulco and Yucatan), this worth-the-splurge restaurant led by Chef Scott Linquist is a culinary gem that engages all the senses. Standout dishes include the dressed oysters (with soy yuzu pasilla chile "agua" and serrano chile cilantro lime "agua" with avocado mousse and salmon roe), tender and ultra-creamy pulpo ceviche (simply decadent), and the Tikin-Xic (branzino prepared Mayan-style, wrapped in banana leaf, and cooked on an open fire before being marinated in achiote, sour orange, and habanero).
